Hop on board mate, this is a journey you don't want to miss out on, I reckon.

Trip to Zuppas Restaurant
Recently I had the opportunity to check out a new restaurant I found on Twitter called Zuppas in Neenah. I heard a lot of great reviews about this place especially because Zuppas provides fresh locally grown products. As I arrived at the restaurant I was curious of what I was going to try on the menu. I noticed there are daily special that gives you a bang for your buck. I tried a roast beef Panini with chips and fresh squeezed lemonade. The sandwich was delicious, and I could tell the roast beef was freshly sliced and made to perfection. Although I was full I couldn't resist buying their famous mac and cheese with bread crumbs on top. It was worth the two dollars I spent on it. Zuppas is also known for their catering business and casual dining. I was highly satisfied making a trip to Zuppas, and knowing what I ate supported local farms and businesses. I am looking forward coming back to Zuppas in the near future, and I hope you have the chance to do the same.

My Restaurant Day
After prepping all semester so far for my restaurant day the day finally came. I was the first one to go as manager because last semester I taken an ethnic restaurant class, therefore I had to go first. I didn’t mind going first because the rest of the semester should be smooth sailing. We have a regular bistro style menu and each person who is managers creates their own special featured menu. On my menu I had grilled egg plants with tomato and feta, a grilled salmon salad, a Bison burger, Chocolate covered strawberries with infused chocolate vodka, and butternut coconut squash soup. Each item was tasty and presentable. Although not a lot of people came to lunch, I still had a good time prepping the food and it allowed us the opportunity for a soft opening and make adjustments to anything on the menu. I am looking forward for the weeks ahead for more people to come in and keep us busy. After my restaurant class a group of friends from school and some German students went to the Meuer Corn Maze near Chilton. If you never been to Meuer’s before then I recommend you go because the corn maze is huge and has a unique design. On average it takes over an hour to get through the two sections of the maze. This was my second year going and each year there is a new design. Some of the maze was hard to get through based on clue and basic instincts. Once we finished the corn maze we bought some fresh kettle corn and headed back home. To get a sneak preview of the corn maze click here http://meuerfarm.com/corn-maze.html and it will give you all the information you need. Overall this was a productive fun day, but it was worth it because I was able to spend it with friends and my new German family. In my next blog we are going to take a tour of the Harley Davidson store located in Fond du Lac.

The Germans has arrived
Recently the German students from across the pond arrived in Fond du Lac at Moraine Park Technical College. I headed down to Madison to pick them up from the airport and I was super excited to meet them. As we arrived at the airport we found out the German students missed their connecting flight from Chicago to Madison. I was sad because I didn't see them until I finished work, but I was still curious and excited to see them. After I finished work I headed over to my friend’s house to pick up my guest. Although he was tired, we quickly connected with found out we had similar personalities, and I knew I would have a great time ahead. The next day by instructor Lois’ cold sandwich class hosted a tea party for the German students. They all enjoyed the delicious food and desserts. Later that night we all went to a bonfire. The weather was perfect for a fire and had a nice breeze. We were able to meet each and I got the chance to meet some of the people I have not met yet. I could tell everyone was enjoying themselves. After having a long day I was super tired, and we headed home to get ready for the big week ahead. In my next blog I will talk about the weekend ahead! See you soon!

Germany Exchange Program
As part of Moraine Park Technical College’s Germany Exchange Program the German students from across the pond are coming soon. I am very excited to host and spend time with the German students to show them the lifestyle in Wisconsin. As part of the culinary arts club we have planned a lot of exciting activities for them. This is my second year being part of this program and learning another culture never gets old. Although I didn't travel with the group to Germany this past summer, I am curious to meet the new group of students. For the next 12 days I will give you an inside look of the activities we do each day. I can tell already these days ahead are going to go super-fast, but sit back and enjoy the journey!

Culinary Arts Club goes bowling
Recently the culinary arts club had the opportunity to go bowling at Ledgeview Lanes in Fond du Lac. This was our first gathering to hang out outside of class to have fun and enjoy a night out. It was a small gathering since it was league night at the bowling alley, but for the people who stayed around had a great time bowling, singing, and dancing. My first two rounds of bowling were not too good but the third round became a bowling throw down with our new instructor Mike who is a Moraine Park alumni. We went back and forth getting spares and strikes after strikes. As result I ended winning with a score of 216 to his 202, it was a close round to the very end. This was my highest game I bowled so far, and I hope I can score high again soon. I didn't stay too long because I had to Dj, but the rest of the group stayed to finish off their games. I'm sure we might have the opportunity to go bowling once the Germans come over to visit. Well mates, that is all for now until next time, see you soon!

Fondue Fest 2012
Recently I had the opportunity to participate in my second Culinary Arts fundraising event at Fondue Fest. Being part of the Culinary Arts Club we sold fondue to help fund our educational trips to the Chicago Food Show and the German exchange program. This event was a lot of fun because I was able to work with friends and fellow classmates outside of class. This event allowed me gain more experience in the food industry, and talk to community members about Moraine Park and our culinary field. Although I had to wake up early, every moment was well worth the effort and time. During the day I was able to take a break to check out Fondue Fest and see what the other businesses were doing to promote their business. I saw a lot of familiar faces, and people were enjoying the beautiful weather. After my break I got back to work to sell the remainder of the fondue. We did well selling all of our food, but since our line was constantly busy we did run out of bread. People kept buying the fondue because it was so delicious. Overall we all put in over 10 hours of volunteer work to have this event become successful. I believe we raised over $4,000 and majority of the money will go into our fundraiser account. I am looking forward to pass on the torch to the new members next year, and show how the production line works at Fondue Fest. Hopefully next year you will check out the fun activities at Fondue Fest, and make sure you buy some fondue, otherwise you are missing out. See you next time in my next blog!

Culinary Club goes bowling
Ahoy Mates! For the annual end of semester activity, the culinary club went bowling at Ledgeview Lanes. For all the hard work we put into fundraisers, going bowling was a great way for us to enjoy the end of the semester. There were twelve members of the culinary club who attend the event. We had a great time bowling and dancing the evening away. Although I haven’t gone bowling since March my scores were pretty good, and each game my scores went up. My highest game was a 174, and I was satisfied with that score. Hopefully in the near future I can be consistent with a score like that. We bowled four games and didn’t want to stop. Of course all good things come to an end so we all headed home. I am looking forward to next semester for a fresh start and meeting new culinary students. If you are looking for some fun and tasting great food, join the culinary club, I guarantee you will have a blast!

Culinary Students Goes Local
G’day mates! Recently I had the opportunity with other students in my Food Principles class to visit an organic farm. We visited Park Ridge Organics Farm in Fond du Lac to learn about sustainability and the importance of supporting and purchasing local business. Park Ridge Organics Farm
is a family owned and operated certified organic farm offering quality fresh seasonal produce. As we arrived, Robyn, our tour guide, and owner gave us a brief history of how they started their business and how they are impacting the community. I was amazed how much information I was learning and how this farm is growing in popular demand. After Robyn finished talking, she showed us around the farm where all the food grows and is produced. The food was starting to grow and ready for transfer into the bigger fields to finish growing. I had the chance to try an asparagus right from the soil and it was amazing. It was the freshest tender asparagus I ever tried; I never knew this vegetable could taste so good. If you want to find more information about Park Ridge Organics Farm click on the link http://www.localharvest.org/park-ridge-organics-M11061 and you will be amazed on the quality of food you can buy here.

MPTC Culinary Club goes to 2012 Chicago Food Show
G’day Mates! Recently, members of the culinary club and I headed down to Chicago for the 2012 National Restaurant Association at the McCormick Place. In order to participate in this trip we had to volunteer forty hours throughout the school year as part of our club dues. The National Res
taurant Food Show in Chicago is similar to Wisconsin’s Food Show, but is triple the size and I mean literally super massive. We stayed at Hotel 71 which is a prime location in downtown Chicago and minutes away from the food show. I was excited to stay at this hotel because this is the same spot where the film “The Dark Knight” was filmed. As we checked in I found out my room was on the top level on the 39th floor, and the views were amazing.
After checking in we got on a shuttle bus to attend the Food Show at the McCormick Place. When we entered the building my eyes got huge because I realized how big the Food Show was. Numerous food companies were everywhere including food products, drinks, and even marketing firms. There were so many things to see that I didn’t know where to start. We decided to divide and conquer to see all the attractions and sample the various products. Throughout the show I talked to different people and networked to hopefully find a potential career in the near future. After awhile I got tired because of all the walking. We were there for seven hours and we still didn’t see everything. I recommend if you have the chance to attend the Chicago Food Show to attend at least two days so you don’t have to rush through things and can enjoy the time there.
When the food show came to an end we headed back to our hotel to change clothes for dinner. We attended a restaurant called Vermillion, which is located a block away from Michigan Avenue in downtown Chicago. Vermillion is a fusion type restaurant that specializes in India and Mexican cuisines. I was excited to check out the restaurant because I love both styles of cuisines, and combining these two was amazing. There were eleven of us and we basically tried everything on the menu. The food was amazing. For the entrée I decided to try a Red Fish mixed with vegetables. Although the waiter said this was the spiciest item on the menu, I didn’t believe him because I love spicy food. When my food came I dug right into my food and the waiter was not lying this dish was beyond spicy. It had great flavor but the spice behind the meat was so overwhelming I began to sweat. After that I could barely finish my meal, but I kept going because the flavor was delicious although the heat kept coming back hotter. As we finished our entree we ordered desserts and they were beyond amazing. The flavors were out of this world, and the decorations were fantastic! Once dessert was done we were full, but a healthy full since all the ingredients were freshly made. We decided to walk back since the weather was nice. We even saw a super nova moon, which is when the moon is closest to the Earth’s atmosphere than any other time of the year. I wish I had a better camera because this moon was beautiful, and I couldn’t get the quality picture I wanted. After a successful fun day it was time for bed. Until next time, ciao!

My South Korea Restaurant Day
Ahoy Mates! May 3 was the day I have been waiting for all semester. I had my restaurant day with a South Korean Menu. I was nervous because I wanted to make sure the food was tasty and the appearance of everything was pleasant. At the same time I was super excited to have my day because I was able to use my own creativity and show what I learned in class. Another reason I was excited was because my family from Chicago came up for lunch. Since I barely see them; for them to come up was an honor to show off Moraine Park. In the morning I set up decorations for my restaurant and set the task for the team to start to get ready for cook off time. When lunch time came I was ready to shake and bake! Me being the host/manager I was able to greet people and talk to the guests. Halfway through my family came; we hugged one another with joy. As they received their food, I checked around with people to see how their food was and people loved it. My family adored the lay out of my food, center pieces, and choice of ethnic region. After this I felt confident that I have the potential of owning a restaurant one day because I love making great food and speaking with people. After my restaurant class was finished I took my family to Blessed Bee Cupcakes on Main Street. They loved the little shop, and the choices they had. Shortly afterwards I showed my family my new house. They loved it especially since it is a upgrade from the previous house. Once the tour was complete my family headed back home to Chicago, and I finished unpacking my boxes. After a day like that I was finished and was completely wiped out. I’ll catch you on the next blog as I head down to sweet home Chicago.

A busy month of May ahead
Ahoy Mates! Welcome to a brand new month! As the end of the semester nears, my backpacking trip is getting even closer. I am looking forward to finishing the semester because it has been a busy semester, but with all that being said it has been a fun voyage thus far. Looking ahead for this month I have some major events coming up such as my ethnic restaurant day, the 2012 National Restaurant Association Food Show in Chicago, projects, and much more. It is my honor to share my journey with you and I am always open to comments and new ideas. So mates sit back and let’s welcome May!

Moraine Park Foundation Gourmet Dinner
G’day mates! April 27 marked another super busy day for me. Things began with me attending my sauce class; we made barbecue sauces, a coulis sauce, and a relish sauce. All of these sauces pair great with various types of meats and appetizers. After my class I went to help my friend Rachel move to her new apartment. It didn’t take us long to get things packed and moved. It only took two trips across town to finish moving. Afterwards I quickly went back to school to help out with the Moraine Park Foundation Gourmet Dinner. The Gourmet Dinner is an annual event benefitting the Moraine Park Foundation, which helps support student scholarships. This year’s theme was the Titanic because it marked the 100 year anniversary since the ship sank. Everything on the menu represented the meals served on the first and last voyage. My job for the night was to help out being the drink server, and made sure the drinks were stocked. I had the opportunity to meet staff members who volunteered their time to help out. I also learned the types of wines we were serving to pair with each entrée. I had a great time talking to people, serving drinks, and making this night a fun event. Students and instructors behind the scenes did a tremendous job prepping, cooking, and plating the foods. After the dinner we had to start to clean, but we all did a fast smooth job to accomplish our task. We finished around midnight, and at this point we were all tired and ready to go home. I know for me I was wiped out, and had to get ready for bed because I had to work the next morning. To check out the video I was in for the Gourmet Dinner, click on the Link to see the fun. http://www.morainepark.edu/about-mptc/foundation/2012-gourmet-dinner/
On my next blog I’ll be sailing into the month of May, stayed tuned!

Good News
Howdy Mates! February 23 started off on a good note because I found out I got the student ambassador position for Moraine Park Technical College. It is a honor to have this position because I know I will do whatever it takes to get people involved with campus activities, and communicating with students, staff, and instructors. I am looking forward to the numerous activities ahead and working on becoming a better person to balance my schedule and staying well rounded. After I received the good news I headed off to my Ethnic Restaurant class. I told some of my friends and classmates and they congratulated me on my new position. As we continued with class we went over how to service our guests in restaurants. I learned some important information how to keep guests satisfied, and the proper ways to serve drinks and food to people. All of these steps will help me to teach others down the road of the knowledge I was taught. Once class was done I did some errands around town paying off my bills, and keeping up with the maintenance of my vehicle. Afterwards I meet up with my friend Sean to have dinner at a local restaurant called Parrot Palms located on Johnson Street in Fond du Lac, Wisconsin. Since we both have busy schedules we meet up at least once a week and catching up on each lives and laughing of the past. Parrot Palms was a unique place, the theme was compared to a tropical place like Hawaii. There is a decent size dance floor, and the music was good because they were playing great music from the 70s. It is always nice listening to music in the past instead of the typical radio music. Five minutes later we ordered our food, and within no time the food came out. I ordered a hamburger, chips, and their hottest wings because I love spicy foods. After we finished our dinner we played a series of pool, although I’m not very good I still won because my friend Sean kept hitting in the eight ball, but I didn’t complain. Overall I must say we would come back and try some other food on the menu too see If they have the best in town. Since it was Thursday night I went into work to DJ at Slim and Chubby’s, and it was a solid night. People were dancing and enjoying themselves; this always makes me happy to see other people having a great time out. Well mates after a fun productive day it’s time for me to get some sleep I have another big weekend ahead. Ciao!

Week 2 of school
G’day Mates, after a busy weekend of working and playing soccer it was time to get ready for week two of school. In my Food Principles class we went over culinary terms, and talked about how we can use these terms in our career. There were a lot of terms I was unaware of because I haven’t had much experience in the food industry, and some of the terms originated from French or Italian cuisine. Nevertheless I gained knowledge of using these terms to communicate with people, and utilize culinary terms into my writing. After class I had a two hour break before my next class, so I decided to get a haircut at Techniques salon on campus. The cosmetology department offers a hair salon that is open to the public for a reasonable cost. This allows the students to gain more experience cutting and styling hair. I figured since the students don’t get much experience on men’s hair I would assist by letting them cut my hair. The one student was a bit nervous, but I told her no worries it’s the only way you have to get practice so no pressure. During the haircut the instructor kept checking to make sure everything was going well, and to say the least, I was satisfied with my haircut. After my haircut they shampooed and conditioned my hair all for seven dollars which is a great bargain. I told them I would come back and recommend others to come here for haircuts. Click here to see a list of their services: http://www.morainepark.edu/services/techniques-salon/#student-labs
Afterwards I got some lunch in the cafeteria then headed into my Food Styling class. We went over our recipes and ideas of how we wanted to design our plating for the food competition next month on March 12 in Milwaukee. With the students in class we have a lot of fun making jokes and coming up with new ideas to have the opportunity to win and place in the competition. I am super excited and nervous but this will give me more experience and make me a better person by challenging myself. After class I got ready for our first culinary club meeting. In this meeting we introduced new members to the club, and talked about our plans for fundraisers this semester. We have to do with a busy schedule ahead, but that is what we best working under pressure and getting things accomplish. Our main goal is to raise money for our Germany trip which is open for everyone including nonstudents, and our food show in Chicago. Both of these trips will be held in May, if you want more information check out the culinary corner board or contact me for more information. Our meetings for the culinary club will held every Tuesday at 4:30 p.m. in room A111, so don’t hesitate, come join the fun! Well mates after a long day, it is time for me to do some homework. I’ll catch you on the next voyage!

Something buzzing in town!
On Thursday, January 26, I started my day off by going to my ethnic restaurant class. I was super excited to start this class because we are able to pick a cuisine of our choice, and use those recipes for our restaurant day. Basically in this class we are taught how to run a restaurant from the front of the house to the back of the restaurant. These hands on techniques are one of a kind to get a sneak preview of how running a real restaurant would be. We went in order telling our instructor what ethnic cuisine we wanted to get, and I was sure I would get India because I love the spices in this region. Before I was able to pick India my friend Julie picked India and I was shocked, but she didn’t know I wanted that country so then I said well I’ll pick another country. Although I was sad I couldn’t get my first choice, I decided another country to choose would be South Korea. Once I did some research I was satisfied with my second choice. We also received our date for our restaurant day and my day is on May 3, 2012 at Park Terrace at Moraine Park Technical College on the Fond du Lac campus So mark off your calendar for this day because the food will be delicious, and I would be pleased to see a lot of people to come out.
After class was done some of my friends and I decided to check out this new Bakery in town called Blessed Bee Bakery located downtown Fond du Lac on Main Street. We were curious to see what this new bakery had to offer. As we entered the bakery our first thought was we were impressed with the layout of the shop. The candy decoration displays on the walls were unique and each turn we made we saw more things that impressed us. After a customer was finished with her purchased we got a chance to speak with the owner! Aimee McCarty owner of the bakery gave us an inside look of how she started her business, and she told us some exciting new things coming soon to her business. Of all the business I’ve seen opening in town on Main Street I have a feeling this business will go far based on the goals Aimee has. I am excited to see a business with a lot of potentials opening its doors to the community. If you get a chance I reckon you stop in and try a cupcake because they are amazing, and I’m guaranteed you will go home satisfied. At least for me I will be back in a heartbeat, and I will have the pictures to show you. Well mates after finishing a delicious cupcake that would be all for today, I will catch you soon on my next adventure!

Happy Friday 2012

Ah at last it is the first weekend of 2012 and what is a better way to kick off the weekend? Well the answer to that would be trying out a new restaurant! My friend Jade and I kept our promise to hang out and try out new restaurants. We decided to check out a Korean restaurant in Appleton, Wisconsin. We both tried various Asian cuisines but we haven’t tried Korean, so we figure we should check out this place since it had received many great reviews and award many honors. As we drove up to Appleton the weather was a bit windy but pleasant for a winter day, although it felt like spring time. The drive there took about forty-five minutes, but then at last we were at the restaurant. From the outside it looked small until we came inside and the place was a lot bigger than we expected. Inside you would think we were in a different world. The walls were painted green and had various art pieces showing the culture style.
As we were seated the menu looked fancy and the choices to eat were endless ranging from appetizers, lunch specials and much more. I was applauded about how big the menu was and I had a hard time deciding what to get because everything looked and sounded so good! Finally we decided what we wanted to get; I order a Korean BBQ chicken with purple rice. Yes that is correct I did say purple rice, to me it tasted like a cross over of wild rice and sticky rice. My friend Jade ordered the same thing except beef instead of chicken. Once our lunch came everything looked and smelled so good, I already knew I was going to eat everything on my plate even if I get full because the smell was fantastic. As we dug into our meal everything tasted so good, everything was freshly made and the flavors were amazing! Like I promised myself I finished everything on plate, although afterwards I was super full but it was worth it! Together our bill came out to be $24 which is a bargain for a killer deal. One more thing before I dock for the day. As a tip I would say lunch is the best time to go to a restaurant because you can take advantage of lunch specials that offer more food and half the cost of dinner prices. Well mates that all for the day, Ciao!

New Week New Year

On January 3, I had a productive day for the new year. Like many others I plan on staying in shape and doing something productive each day. In order for me to accomplish my goals I started to write down new things I do each day so at the end of the year I can see all the productive things I did. This method shows things in life are not always negative or bad. Anyways I started my Tuesday with me working out to my new video game I bought for my Kinect Xbox called UFC Training. This workout is the perfect method to get a great workout without leaving the house. I can tell this workout video will have an impact on my body throughout the session. Afterwards I started to cleanup and rearrange my room to become more organized with the different things I have to do each day. Once I finished with my tasks, I started to cook some food for supper. I decided to cook a small hen marinated in beer in the crock pot with vegetables. It turned out really tasty and tender, I recommend for anybody who is always on the go to use the crock pot method because it can cook for hours while at work or doing something else. For people who never used a crock pot you basically put your meat in a pot and let it slow cook for hours and your food is guaranteed to come out tender. Later in the night a group of friends from MPTC and I decided to go bowling at Ledgeview Lanes in Fond du Lac. There were about ten of us that got together to have a great time over the winter holiday. It is always a good time to meet up with friends over break. We all had a good time of course singing, bowling and dancing. My scores weren’t the greatest but one game I did bowl a 189. I hope one of these days my bowling average can be in the 200 area, but until then I’ll practicing until I reach my goal. Well that pretty much cover my Tuesday adventure, until the next voyage I’ll catch you soon! Ciao, Lee IV

Last Day of Finals
At last, after a week of cleaning, taking exams, and selling cookies today is the last day of classes before the winter break. You can tell people were happy to get on break, but sad because we won’t be cooking in the kitchens for a month, so it is a bitter sweet feeling. Before we could go on break we had two more finals to go. In my potatoes/vegetable class our final was we had to create an agenda for people to clean up in the kitchen, create a plan to make it easier for new students to understand the concepts of classrooms, and basic knowledge of the kitchen. As a group we came up with some great ideas, so hopefully these ideas can benefit others in the near future. Since we finished a little early my friend Chelssie and I figured it would be a good idea to go around and sell our cookies for our fundraiser. So we went around sold cookies while playing Yahtzee on a cart. It was a great combo and people really liked the cookies. They sold fast. By the time we finished selling cookies we only had four trays of cookies left, and we started with thirty trays.
In my afternoon salads class the only thing we had left to do was clean up the rest of the kitchen since we did our final test out on Tuesday. This process didn’t take long because we have been cleaning all week. Basically we had to polish the stainless steel appliances and make sure everything was tidied up for break. Once we finished we started to pack up our bags and cheered for winter break. Finally we all get to enjoy our holiday, but we made sure we will all keep in contact over break to have some fun hanging out.
Later in the night I had my second dj debut at Slim & Chubby’s Bar located downtown Fond du Lac, on Main Street. I was excited because I love music, dancing, having a great time with friends and meeting new people. The start of the night started a little slow and I was getting worry because I didn’t want to end early. As time went on people slowly started to come in, then I got some pop music going, then the next thing you know around 11:30 p.m. there were a crowd of people who hit up the dance floor and danced the night away. This made me happy to see people having a great time, and I was able to DJ until the bar closed. Overall this day and night was really fun, can’t complain at all!. Like always I’ll catch you on the next voyage!

Finals Day 2
Welcome back to day two of finals, if you are taking finals as well I wish you the best of luck! In my potatoes/vegetables class we had a challenge final, we had to pick a tray of food and make several dishes out of them such as the television show “Chopped” on the Food Network. The tray I picked had a lot of fun items that I was able to cook with. I have pictures to show you the dishes I came up with and they turned out pretty well. My afternoon final was for salads class, and of course we had to create several salad dishes ranging from Chef Salad to a compose salad. This time around I felt more confident with my salad garnish. I found out lately that I like to create and design food items rather than making them.
After a day of final exams I headed home and I had nothing planned, until I came home my housemate reminded me it was my friend’s birthday. Well like always my adventure is never ending, so we went to La Tapitia Mexican restaurant located on Johnson Street in Fond du Lac, WI. This is my favorite Mexican restaurant in town, if you never been here before then I recommend this is a must have food. From their authentic tacos to their hocharta (rice water) everything is good. There were about fifteen of us celebrating my friend Denny’s birthday. We laughed and ate well for hours; spending time with friends is always a good time. That is all for now another day in the book checked off!
Cheers,
Lee IV
